Hélène Darroze appartient à une famille d'hôteliers-restaurateurs. Se destinant à reprendre la direction de l'auberge tenue par son père, elle opte après son Bac D pour des études puis, son diplôme en poche, décide de parfaire sa formation en travaillant dans un palace. Son père l'introduit alors auprès d'Alain Ducasse. Cette rencontre va changer sa vie. En décembre 1990, Hélène Darroze commence sa collaboration avec le Chef du restaurant monégasque "Le Louis XV". Commis de cuisine pendant 4 mois, elle regarde, note et n'est autorisée qu'à laver la salade et à tourner le beurre. Puis, elle est embauchée en qualité de Responsable Administrative du Bureau d'Alain Ducasse à l'Hôtel de Paris. Au quotidien, elle gère le fichier recettes et discute avec le Chef des cartes et menus à renouveler. A l'été 1993, elle seconde son père dans la gestion du Relais & Château, il décide de laisser les rênes à sa fille. Les éloges ne vont alors plus cesser. Très vite, Hélène Darroze est élue "Jeune Chef de l'Année" par le Guide Champérard. En octobre 1999, elle ouvre son restaurant à Paris dans le quartier de Saint-Germain-des-Près. "L'ambassadrice de la gastronomie du Sud-Ouest vient conquérir la capitale ! Décor contemporain haut-en-couleur, à l'image de la cuisine, délicieusement personnalisée." commente le Guide Rouge 2000 en lui conservant toute sa confiance.
